Ingredients:
- whole chicken
- 2 Tbs. margarine
- 1 cup chicken broth
- 8 oz. sour cream
- can cream of chicken soup
- 1 med. chopped onion
- 1 small can chopped green chilies, drained
- 2 cups shredded cheddar cheese
- Flour tortillas
- Cook chicken (or use a already cooked rotisserie chicken).
- Saute onion and green chilled in 2 Tbs. margarine in a large skillet.
- Stir in cream of chicken soup and sour cream.
- Blend and stir in chicken broth until smooth.
- Set aside 1/3 of the mixture. Add chicken to the remaining.
- Fill each tortilla with 1/4 cup chicken mixture. Roll into an enchilada.
- Pour set aside sauce over tortillas and sprinkle with cheese.
- Bake at 350 for 30 minutes, uncovered.
You will love it!!! I serve with Spanish rice and shredded lettuce.
